
Growing up in New York I have a very clear idea about what pizza is supposed to look like and taste like: flat and pliable, lots of oregano in the sauce, cheesy and greasy, toppings on top of the cheese, pieces cut in foldable triangles. One would NEVER use cutlery!!


Chicago has a deep dish pizza that is so different, yet so yummy. I prefer not to compare it to NYC pizza because it is really like a different food group. The crust is more like a pie crust, an inch and a half high, but not as crumbly as apple pie crust. The ingredients are layered under the cheese layer, and the garlicky marinara sauce is on top. I find utensils necessary, and one slice often fills me right up. Righteous.
